Shrimp & Pork Wontons w sesame chili oil

Ingredients

Filling

  • 100g Ground Pork (30/70 fat/lean)

  • 2g sugar

  • 1g salt or to taste 

  • 8g oyster sauce 

  • 6g sesame oil

  • 6g shaoxing wine 

  • 3g ginger minced 

  • 10g white part of scallions minced

  • 4 large peeled and deveined and chopped

  • 1pk Wonton Wrappers 

Wrapping wonton tips 

  1. Mix filling until it has a pasty consistency

  2. Put filling on wonton wrappers and add in one piece of shrimp

  3. Seal all edges with water

  4. Make sure to seal all edges and there are no air bubbles (air bubbles will make your wontons break when boiling)

Boiling Wontons 

  1. Once water starts boiling in a pot, put in wontons

  2. Mix to ensure wontons don’t stick to the bottom of the pot

  3. Once water start boiling again lower heat to medium.

  4. Cook until wontons start to float to the top

  5. Turn off stove. Let wontons sit and rest in water for 1-2 mins before scooping them out.

Sauce 

  • 2:2:1 sesame oil : peanut butter : sugar

  • 1 tbsp black vinegar (add salt to taste)

  • 1/4 cup chili oil crisp (I make my own) 

  • Pickled mustard greens (optional) 

  • White pepper

Top wontons with sauce, cilantro or scallions.
