Avocado Basil Pasta

Approx. 2 servings

Ingredients:

4oz Whole Wheat Pasta

2 Large Ripe Hass Avocados 

3 large minced garlic cloves

1/4 cup Extra virgin Olive oil

1/4 Cup Heavy Cream (exclude if vegan)

1/4-1/3 Cup warm pasta Water (I prefer a runny sauce)

1/4 Cup lemon juice

1/2 cup chopped basil 

1/2 cup finely grated Parmegianno Reggiano (can add more on pref.)

Garnish:

Salt to Taste

Black pepper for garnish

Cherry tomatoes for garnish

Instructions:

  1. In a bowl, using OXO Good Grips Smash & Scoop Avocado Tool, scoop out and smash ripe avocados.

  2. In a pan, OXO Tri-Ply Stainless Mira on medium low heat, add in extra virgin olive oil, add in minced garlic. Sauté for 3 mins. Add in chopped basil, smash avocados, lemon juice, and heavy cream. Turn heat off.

  3. Bring a pot of water to boil. Add in Whole Wheat pasta. Boil for 7 mins or until pasta is al dente. 

  4. Add cooked pasta to avocado sauce pan. Add in warm pasta water, Parmegianno Reggiano, and toss well.  *add salt to taste.

  5. Transfer pasta to plates and top it off with cherry tomatoes, black pepper and of course any extra cheese!!
